Bechamel

2 tbsp butter

2 tbsp AP flour

1 1/4 cups milk, heated (low heat until bubbles form)

salt, pepper and a pinch of nutmeg


  1. Melt butter on low / medium heat

  2. Add flour and whisk to paste

  3. Add warm milk

  4. Stir continously, even after it comes off the heat


For a cheese sauce add 1/2 cup grated cheese and a pinch of cayene .
