Connor's Quinoa Snacks


Fun to make together and fun to eat. A batch will last a few days in the fridge and are handy to keep in the diaper bag for quick trips around town. 📷

Ingredients

3 cups water 1 cup quinoa 1 cup frozen chopped spinach, thawed and drained 1 cup dry bread crumbs 4 eggs, whisked 1/3 cup shredded Colby cheese

Directions

Bring water and quinoa to a boil in a saucepan.

Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes.

Preheat oven to 400 degrees F (200 degrees C).

Prepare a baking sheet with either oil or parchment or a silicone sheet - whatever you've got handy.

Stir quinoa, spinach, bread crumbs, eggs, and Colby cheese together in a bowl.

Have little helper choose a cookie cutter that's not too detailed and drop spoonfuls of the quinoa mixture onto cutter.

Use a spatula to press the mixture into the shape and gently remove the cutter.

Bake in the preheated oven until the bottoms of the patties are golden, about 15 minutes.

Flip patties and bake until golden, about 5 minutes more.

Serve with some kind of sauce. Personally I dig out whatever salad dressing is in the fridge, Connor prefers yogurt ;)
