Crispy Mushrooms

Ingredients
24 oz. Cremini mushrooms
2 cups flour
2 eggs
1½ cups panko bread crumbs
½ cup parmesan cheese
Canola oil
Salt & Pepper

Directions
Start by peeling the mushrooms, don't wash them. Use a damp paper towel to remove any stubborn dirt
Prepare the coating by adding the flour to 1 bowl, add salt and pepper
Add the eggs to the 2nd bowl and mix with a fork
Add the breadcrumbs and parmesan to the last bowl and mix
Choose 1 hand to get covered in batter and take the mushroom, roll it in the flour mixture, then the egg bath and finally the breadcrumb mixture
Once all the mushrooms are covered add enough oil to a pan to come up to at least half the height of the mushrooms
Heat the oil to a medium temp (6/7). Once the oil is ready take a piece of batter from panko bowl or from you hand that is not covered in gunk and test a piece in the oil. Once it starts to fry the pan is hot enough to add the mushrooms
Add as many mushrooms as you can fit with crowding and wait for them to brown fully before turning them over
Once a mushroom is done on both sides move to a paper towel and replace it with one of the waiting mushrooms
When they've all been fried use a paper towel to take up any excess oil
These are great with aioli
