Roasted Sweet Potato Bites

This one is quick and easy. A perfect size for little toddler hands and great for baby to practice stabbing with his fork. The most difficult part of this dish is making sure enough of it stays on the plate long enough for baby to eat it. 📷
Ingredients
1 large sweet potato 1 tablespoon water 1 tablespoon olive oil 1 teaspoon sea salt 1/2 teaspoon coarse black pepper
Directions
Slice sweet potato into 1/4-inch-thick pieces.
Place in a microwave-safe bowl with 1 tablespoon water.
Microwave on high for 2 1/2 minutes.
Transfer potatoes to a plastic bag.
Add olive oil, salt & pepper. Shake to fully coat the sweet potato.
Bake at 450 degrees F., turning once, for 15 minutes or until tender and browned.
